The BBS Global MBA Food and Wine meets the excellence of the territory"},"content":{"rendered":"<p>The discovery of new tastes, the encounter with the quality production chain and the comparison with the professionals of the sector: these are the main ingredients used to create a day dedicated to the excellence of the territory, in the evocative location\u00a0of Antica Corte Pallavicina in Polesine Zibello (PR). <strong>Centomani, di questa terra<\/strong> (<em>hundred hands of this land<\/em>), is the name of the event held last April 9, during which the students of the <span style=\"color: #ff6600;\"><strong><a href=\"\/hp\/?p=1613\" target=\"_blank\" rel=\"noopener noreferrer\"><span style=\"color: #ff6600;\">Global MBA in Food and Wine<\/span><\/a><\/strong><\/span> were able to meet the producers, learn about the procedures and discover the agri-food\u00a0chains\u00a0for a\u00a0360-degree sensory experience. A great feast of taste, but above all an opportunity of confrontation\u00a0and sharing of values \u200b\u200bamong <strong>50 producers<\/strong>, <strong>50 great Chefs<\/strong> of the region and illustrious Italian and international guests.<\/p>\n<p><!--more--><\/p>\n<p>&nbsp;<\/p>\n<p><em>&#8220;Being here today is an important opportunity for us to get to know, up close and out of classrooms, the production processes that are behind the high quality products of this territory, an example of a winning union between respect for tradition and innovation. We have had the opportunity to participate to\u00a0a 100%\u00a0Italian experience,<\/em>&#8221; say enthusiastically\u00a0the BBS students, who spent the day\u00a0discussing with individual exhibitors, in order to understand their products and methods of processing raw materials.<\/p>\n<p>&nbsp;<\/p>\n<p>Centomani is an annual event promoted by <strong><span style=\"color: #ff6600;\"><a href=\"http:\/\/www.cheftochef.eu\/evento\/centomani-di-questa-terra-2017\/\" target=\"_blank\" rel=\"noopener noreferrer\"><span style=\"color: #ff6600;\">CheftoChef<\/span><\/a><\/span><\/strong>, the cultural association that brings together the best chefs and food&amp;wine producers in Emilia Romagna. <em>The year of Italian food<\/em> is the theme\u00a0that characterized the 2018 edition, enriched by the presence of an international guest, the director of the <a href=\"https:\/\/www.bculinary.com\/es\/home\" target=\"_blank\" rel=\"noopener noreferrer\">Basque Culinary Center<\/a>, <strong>Jo Aizega<\/strong>, and his meeting with three representatives of the world of education: <strong>Max Bergami<\/strong>, Dean of Bologna Business School, <strong>Luca Govon<\/strong>, lecturer at the International School of Italian Cuisine and <strong>Andrea Fabbri<\/strong>, professor of the University of Parma.<\/p>\n<p>&nbsp;<\/p>\n<p><em>&#8220;The dishes,&#8221;<\/em> explains <strong>Massimo Spigaroli<\/strong>, president of the CheftoChef association, <em>&#8220;tell about current events, values \u200b\u200band challenges for the future.
