This is the winning formula of the inaugural <\/span><b>Smart Week<\/b><span style=\"font-weight: 400;\"> of the <\/span><a href=\"https:\/\/www.bbs.unibo.it\/en\/master-executive\/food-innovation-and-regeneration\/\"><b>Executive Master in Food Innovation and Regeneration<\/b><\/a> <span style=\"font-weight: 400;\">at Bologna Business School. From November 27 to 30, 2024, Emilia-Romagna transformed into an open-air laboratory for leaders in the agrifood sector.<\/span><!--more--><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">The educational journey began in the heart of the <\/span><b>Food Valley<\/b><span style=\"font-weight: 400;\">, where participants visited two iconic Italian agrifood companies: <\/span><b>Felsineo<\/b><span style=\"font-weight: 400;\">, a Bologna-based leader in the production of mortadella and now also vegan cold cuts, and <\/span><b>Granarolo<\/b><span style=\"font-weight: 400;\">, a benchmark in the dairy industry. These were not just corporate visits but full immersions into the most advanced production processes, where <\/span><b>tradition meets innovation<\/b><span style=\"font-weight: 400;\"> through pioneering solutions and new business models designed to tackle the challenges of <\/span><b>sustainability. <\/b><span style=\"font-weight: 400;\">The day concluded with the presentation of the book <\/span><i><span style=\"font-weight: 400;\">Regenerative Enterprise: The New Frontier of Corporate Sustainability<\/span><\/i><span style=\"font-weight: 400;\"> by <\/span><b>Niels de Fraguier,<\/b><span style=\"font-weight: 400;\"> offering fresh insights and inspiration on <\/span><b>regenerative practices<\/b><span style=\"font-weight: 400;\"> and their role in shaping the future of businesses, not just in the food sector.<\/span><\/p>\n<p>On the second day, the participants explored the world of <strong>Parmigiano Reggiano<\/strong>. From the production techniques at the <strong>Caseificio Sociale Val Parmossa<\/strong> to the pastures of the <strong>Azienda Agricola Biologica Antica Cascina Gazza<\/strong>, and the aging and maturation rooms of <strong>Parmigiano Reggiano<\/strong> of<strong> Montanari &amp; Gruzza<\/strong>, which plays a pivotal role in the entire supply chain of the world\u2019s most famous cheese, revealing its secrets to the participants.<\/p>\n<p><b>Innovation<\/b><span style=\"font-weight: 400;\"> took center stage on the third day, with a focus on the <\/span><b>new frontiers of food packaging<\/b><span style=\"font-weight: 400;\"> at Tetra Pak&#8217;s facilities and the art of producing and bottling Modena\u2019s balsamic vinegar at Acetum. These are two examples of how <\/span><b>technology enhances and preserves tradition<\/b><span style=\"font-weight: 400;\">, turning it into a competitive advantage. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">The Smart Week concluded with an on-campus day, where Sebastiano Porretta, President of the Italian Association of Food Technology, guided participants through a workshop on developing <\/span><b>consumer-oriented products<\/b><span style=\"font-weight: 400;\">. The day ended with a lunch based on <\/span><b>regenerative techniques<\/b><span style=\"font-weight: 400;\"> at the Future Food Living Lab of the Future Food Institute.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">\u201cThis Smart Week encapsulates the essence of our Master,\u201d said Ludovica Leone, Academic Director. \u201cIt\u2019s a program that combines theoretical expertise with strategic vision, shaping professionals capable of driving innovation while honoring tradition.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">An intensive educational experience that equips participants with the tools and holistic vision to shape the future of the food industry, where <\/span><b>innovation<\/b><span style=\"font-weight: 400;\"> and <\/span><b>sustainability<\/b><span style=\"font-weight: 400;\"> are no longer optional.<\/span><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Four intense days of gastronomic excellence, cutting-edge technology, and sustainability.
